These hot honey ground beef bowls work well for meal prep: cook the warm parts first, then add avocado and an egg when you eat. I make them when I want a rice bowl with sweet heat from the beef and crisp-edged sweet potatoes (I like that contrast).
I use 85% lean beef here, and I drain the excess fat after it browns in the skillet. The garlic, smoked paprika, chili powder, and hot honey go in afterward, and I pull the pan after the two-minute simmer, when the honey has thickened around the meat and smells warm from the spices.
Cut the sweet potato into small, even cubes and give it room on the baking sheet. A crowded layer steams. At 425°F (220°C), a single layer, tossed halfway through, leaves the centers tender and the outside crisp after 20 to 25 minutes in my oven.
For serving, divide the rice into bowls, then layer on the beef, sweet potatoes, avocado, and an egg. Finish each one with crumbled cheese and a drizzle, then serve it right away. Cilantro and sesame seeds are optional at my table, but I don't skip extra heat at the table.
