I like to make chicken crunch wraps for a quick dinner. Seasoned chicken and Greek yogurt topping are served on whole wheat tortillas toasted with corn tostadas. Ingredients for the tostada topping include both crunchy and cheese layers. Chicken crunch wraps are hands-on food, but the filling comes together in two separate bowls.

I microwave big tortillas before rolling them. It's easier to roll them this way without tearing. Don't put filling along the sides of the tortilla. When folding the tortilla in half, I place it seam side down over heat to help seal the roll and brown the tortilla.
Cook the wraps in a nonstick pan on medium heat for 3-4 minutes on each side. Cooking too many wraps at once can prevent you from turning them easily. It takes time for the cheese and tortillas to heat and crisp. I press down lightly on the tortillas with a spatula as I cook the first side.
For extra heat, you could chop up some jalapenos and include them in the filling or add a little cayenne pepper to the sauce or other topping. Other options for boosting the filling include black beans and corn. Sautéed zucchini would be another possibility. A low-carb tortilla with a cheese crisp could replace the tostada shell for a low-carb alternative.
Why we keep this one around
- The toasted tortilla and corn tostada offer two crunchy choices that are not fried in oil.
- Each wrap is made separately. This can be useful when some customers want jalapeños and others don't.
- The Greek yogurt sauce has lime and hot sauce ingredients to pair with the seasoned chicken.
- A large flour tortilla is wrapped over the filling without leaving the tostada exposed at the center.
- You can plan and prepare filling ingredients ahead of time to make it easier to move dinner along.
- Ground turkey and lean beef can substitute for chicken. Seasoned lentils are another option.
Ingredients
- •1 lb boneless, skinless chicken breast (cooked and shredded)
- •2 tbsp taco seasoning
- •1 medium red bell pepper (finely diced)
- •½ medium red onion (finely diced)
- •¼ cup fresh cilantro (chopped)
- •½ cup plain Greek yogurt
- •1 tbsp fresh lime juice
- •1 tsp hot sauce (or more, to taste)
- •4 large burrito-size whole wheat tortillas
- •4 corn tostada shells
- •1 cup shredded Mexican cheese blend (or cheddar)
- •1 tbsp avocado oil (or olive oil)
Instructions
- 1
Combine the cooked shredded chicken, taco seasoning, diced bell pepper, diced red onion, and cilantro in a medium bowl until evenly mixed.
- 2
Whisk the Greek yogurt, lime juice, and hot sauce in a separate small bowl until smooth.
- 3
Lay 1 large tortilla flat on a clean surface.
- 4
Spread one-quarter of the Greek yogurt sauce in the center, leaving a border of about 2 inches around the edge.
- 5
Add one-quarter of the chicken mixture over the sauce.
- 6
Set 1 tostada shell directly on top of the chicken.
- 7
Sprinkle one-quarter of the shredded cheese over the tostada shell.
- 8
Fold the tortilla edges up and over the center tostada in a hexagonal pattern, overlapping the edges until the filling is enclosed.
- 9
Heat the avocado oil in a large non-stick skillet over medium heat.
- 10
Cook the crunch wrap seam-side down for 3-4 minutes, until the bottom is golden brown and crispy.
- 11
Flip the wrap and cook for another 3-4 minutes, until golden and the cheese is melted.
- 12
Repeat with the remaining tortillas and filling.
